Christmas menu in your Malibu
If you are travelling over the Christmas holidays, this is no reason to miss out on the culinary delights of the festive season. You can easily conjure up a delicious 3-course meal in your Malibu motorhome or Malibu Van. We start with a salmon and avocado tartare, followed by beef fillet wrapped in bacon for the main course and a baked apple layered dessert in a glass for dessert.

Appetiser: Salmon avocado tartare in a jar
Ingredients for 4 people:
500 g salmon fillet in sushi quality
1 red chilli
1 lime
2 avocados
Salt
Pepper
25 g dill
200g crème fraiche
Preparation:
Cut the salmon and avocado separately into small cubes and wash, deseed and finely dice the chilli pepper. Halve and squeeze the lime and place on top of the avocado. Season with salt and pepper and sprinkle with chilli. Chop the dill into small pieces. Mix the crème fraîche with the dill and season with salt and pepper. Then layer the salmon, avocado cubes and cream in 4 glasses.
Main course: Fillet of beef wrapped in bacon with dumplings
Ingredients for 4 people:
750 g dumpling dough
1 kg fillet of beef
10 bacon slices
2 tbsp olive oil
Salt and pepper
2 red onions
300 ml beef stock
0.5 tsp flour
400 g green beans
Preparation:
Shape the dumpling dough into 16 small balls and prepare according to the packet instructions. Cut the fillet of beef into 8 pieces, coat with the bacon and fry in a pan with oil. Then leave to rest and season with salt and pepper. Peel and chop the onions. Sauté with the gravy and flour and deglaze with the beef stock. Wash the beans and cook them in salted water. Garnish everything together on a plate.
Dessert: Baked apple dessert in a glass
Ingredients for 4 glasses:
3 apples
70 ml apple juice
1 teaspoon cinnamon
8 Speculoos biscuits
140 g whipped cream
140 g mascarpone
1 sachet of vanilla sugar
Preparation:
Peel and core the apples, cut into small cubes. Place in a saucepan with the apple juice and cook the apples until soft. Flavour with cinnamon and leave to cool. Crumble the biscuits and spread over the bottoms of the glasses. Fill the compote on top. Whip the cream until stiff and mix with the mascarpone. Add the vanilla sugar. Then also layer in the glass. Garnish with cinnamon and serve.
